Hey mamas! Who’s in desperate need of a healthy 30 minute meal that everyone will eat? Cause I always am! And while this simple dinner can hardly be called an actual “recipe”, I’d be a big fat jerk if I neglected to share it with you because we love it so much.
We eat this roasted sausage & veggie dish at least 4 times a month and often more when I’m looking for something quick and simple for lunch. A mom can only handle so many peanut butter and jelly sandwiches, ya know?
This is literally the easiest healthy meal imaginable and the best part is…my kids all eat it! Yes, you read that right. I’m not gonna say that they don’t sometimes complain about the vegetables or that they always eat every last brussels sprout, but this has become such a staple at our house that it’s about the best way I know to get my kids to actually eat their greens.
And if need a hack to encourage your littles to get all their vegetables in, here’s my favorite trick: I tell my kids to spear 2-3 vegetable pieces together on their fork with one piece of sausage and eat it all together. They can hardly even taste the veggies that way and I’m satisfied that they’re little bodies are made up of more than just their favorite sugar cereal.
A final note about ingredients: I always use chicken sausages (usually Aidells bought from Costco) but obviously you can use any other kind your family loves. As for vegetables, this is really a choose-your-own-adventure type of dinner! It’s perfect for the end of the week when you’re left with the broccoli and sweet potatoes previously purchased by a more ambitious and youthful version of your meal-planning self. Try carrots, cauliflower, brussels sprouts, sugar snap peas, yams, bell peppers, etc. If it’s a hearty vegetable that can withstand an oven roasting, then it’ll work!
Roasted Chicken Sausage and Vegetables
Total time: 20 minutes
4-6 Chicken Sausages (about 1 per person)
2-3 lbs assorted vegetables (see note above)
3 Tbs Olive oil
Salt and pepper to taste
Preheat oven to 400° F.
Peel and chop vegetables and arrange them on a rimmed baking sheet. Drizzle veggies with olive oil and sprinkle with salt and pepper. Mix thoroughly with your hands until vegetables are thoroughly coated.
Chop sausages into bite sized pieces and add to tray. Roast for 10-15 minutes, depending on the type of vegetables. After 10 minutes, stick a fork in the hardest vegetables to check for tenderness. Watch closely after that to prevent burning.
Remove from oven and let cool for a few minutes. Enjoy!
